  • 1 & 1/4 cup old-fashioned rolled oats

  • 1/4 tsp cinnamon
  • Pinch of nutmeg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup powdered sugar
  • 1.5 tbsp milk
  • 1/4 tsp vanilla

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy. Add the egg and vanilla extract; mix until combined.
  3. In another bowl, whisk together flour, oats, cinnamon, nutmeg, baking soda, and salt. Gradually incorporate this dry mixture into the wet ingredients until well combined.
  4. Use a cookie scoop to portion out dough onto the prepared baking sheet. Flatten slightly for even baking.
  5. Bake for about 10 minutes until edges are golden but centers remain soft. Cool on the sheet for 20 minutes before transferring to a cooling rack.
