  • 2 ⅔ cups + 1 tbsp all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 1/2 cup water
  • 1 tbsp apple cider vinegar
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice

Instructions

  1. Start by melting cold unsalted butter in a saucepan over medium heat until golden brown and nutty in aroma.
  2. In a mixing bowl, combine flour and salt. Gradually add the brown butter, then mix in water and vinegar until dough forms. Chill while preparing the filling.
  3. In another bowl, combine peaches, strawberries, granulated sugar, cornstarch, lemon juice, and salt to create the filling mixture.
  4. Roll out the chilled dough on a floured surface to about ¼ inch thick, then transfer it to your pie dish.
  5. Pour the fruit filling into the crust. Optionally sprinkle with Turbinado sugar before baking.
  6. Bake in a preheated oven at 350°F (175°C) for approximately 70 minutes or until bubbly and golden.
