Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together softened butter and sugar until fluffy. Add eggs, then buttermilk and vanilla; mix well.
  3. In another bowl, whisk flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients until just combined.
  4. Fill cupcake liners halfway with batter.
  5. For the filling, beat cream cheese with sugar until smooth. Mix in an egg and flour until fully combined.
  6. Spoon cheesecake filling into each cupcake liner over the batter.
  7. Bake for about 25-30 minutes or until a toothpick comes out clean.
  8. Cool completely before caramelizing the topping by sprinkling sugar on top and using a kitchen torch.
