  • pounds sweet potatoes
  • ½ tablespoon extra virgin olive oil
  • ½ teaspoon salt
  • 3 tablespoons assorted seeds (pumpkin, sesame, or sunflower)
  • ¼ cup dried cranberries
  • ½ red onion
  • 5 cups arugula
  • 3 ounces feta cheese (optional)
  • 3 tablespoons extra virgin olive oil (for dressing)
  • 3 tablespoons lemon juice
  • 2 tablespoons mustard
  • 1½ tablespoons maple syrup
  • 1 teaspoon dried oregano
  • ½ teaspoon salt (for dressing)
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C). Peel and chop sweet potatoes into 1-inch cubes. Toss with olive oil and salt on a baking tray.
  2. Roast sweet potatoes for about 30 minutes until fork-tender.
  3. In a pan, lightly toast seeds with cranberries in olive oil for about two minutes.
  4. Whisk together dressing ingredients in a bowl.
  5. On a serving platter, layer arugula, sweet potatoes, red onion, feta cheese (if using), toasted seeds, and cranberries. Drizzle with half of the dressing.
