  • 5 ears fresh corn (shucked)
  • 2 medium roma tomatoes (diced)
  • 1 medium English cucumber (diced)
  • 1 medium avocado (diced)
  • 1/2 medium red onion (minced)
  • 1/2 cup chopped fresh basil
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Bring a large pot of water to a boil. Add shucked corn and cook for about 5 minutes. Remove from pot and allow to cool before cutting kernels off the cob.
  2. While the corn cools, dice tomatoes and cucumber, mince red onion, and chop avocado. Combine all ingredients in a large mixing bowl along with the cooled corn.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper.
  4. Pour the vinaigrette over the salad mixture and toss gently until well combined. Adjust seasoning if necessary.
