  • 4 ears fresh corn, cooked and kernels sliced off
  • 1 pint cherry or grape tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/2 cup chopped fresh cilantro
  • 1 large avocado, diced
  • Juice of 2 limes
  • Salt and black pepper to taste

Instructions

  1. Cook the corn by boiling for about 1½ – 2 minutes or grilling until tender. Let cool before slicing off kernels.
  2. While the corn cools, prepare the veggies: halve the tomatoes, finely chop the onion, and chop the cilantro.
  3. In a large bowl, combine cooled corn with tomatoes, onion, cilantro, lime juice, salt, and pepper. Toss gently to mix.
  4. Chill the salad in the refrigerator for at least one hour to enhance flavors.
  5. Just before serving, dice the avocado and fold it into the salad or place it on top.
