  • 24 oz cream cheese, softened
  • 1 cup sour cream
  • 3/4 cup granulated sugar (for filling)
  • 3 large eggs, room temperature
  • 2 tablespoons freshly squeezed lemon juice
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 2 ripe peaches, thinly sliced
  • 1/4 cup honey or agave syrup
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • 1/2 teaspoon lemon zest

Instructions

  1. Preheat your oven to 325°F (163°C). Mix graham cracker crumbs, sugar, and melted butter in a bowl until combined. Press into the bottom of a springform pan. Bake for 8–10 minutes.
  2. In another bowl, beat cream cheese until smooth. Add sour cream and sugar, mixing well. Incorporate eggs one at a time along with lemon juice and vanilla extract until just blended.
  3. Pour the filling over the cooled crust and bake for 45–50 minutes until set around the edges but slightly jiggly in the center. Cool gradually with the oven door ajar.
  4. For the topping, heat mixed berries and peaches with honey until they release juices; stir in cornstarch slurry until thickened.
  5. Once cheesecake is completely cool, top with berry mixture and chill before serving.
