  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 large eggs
  • 2 tablespoons water
  • 1 cup grated Parmesan cheese
  • 1 cup Italian-style breadcrumbs
  • 1 cup panko breadcrumbs
  • 1/2 cup vegetable oil
  • 1/4 cup unsalted butter
  • 1/2 cup shredded mozzarella cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Pound the chicken breasts between plastic wrap to about ½ inch thick for even cooking.
  2. Set up three shallow bowls: mix flour with salt, pepper, garlic powder, and onion powder in the first; whisk eggs and water in the second; combine Parmesan cheese with breadcrumbs in the third.
  3. Coat each chicken breast in flour mixture, then dip into egg wash, and finally press into the breadcrumb mixture until well-coated.
  4. Heat vegetable oil in a skillet over medium heat. Sear both sides of the breaded chicken for about 4-5 minutes each until golden brown.
  5. Transfer chicken to a lined baking sheet, top with shredded mozzarella, and bake for about 8-10 minutes until cheese is melted and bubbly.
