  • 12 oz corn (grilled or frozen)
  • 1 cup cherry tomatoes
  • 3 bell peppers (red, green, orange)
  • 1/2 red onion
  • 1/4 cup olive oil
  • 1/3 cup fresh lime juice
  • Cilantro lime rice
  • 12 jalapeños, diced
  • 2 teaspoons lime zest
  • 2 tablespoons lime juice
  • 1/2 cup cilantro, roughly chopped
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon chili powder (optional)
  • 1/4 teaspoon cumin (optional)
  • 23 tablespoons chicken broth, more if needed
  • 1 tablespoon garlic, minced
  • 1/2 yellow onion, sliced
  • 2 tablespoons fajita seasoning
  • Additional kosher salt and ground black pepper, to taste

Instructions

  1. Prepare the Corn Salsa: In a bowl, mix corn, cherry tomatoes, jalapeños, red onion, lime zest, lime juice, cilantro, salt, pepper, chili powder, and cumin. Adjust seasonings as desired.
  2. Marinate the Flank Steak: Pat dry the steak and season with salt and pepper. Combine olive oil, lime juice, lime zest, chili powder, cumin, garlic, soy sauce in a bowl; add steak and marinate for at least 30 minutes.
  3. Cook the Flank Steak: Heat a skillet over medium-high heat and sear the steak until cooked to your liking. Let it rest before slicing.
  4. Sauté Veggies: In the same skillet with chicken broth added for deglazing, sauté onions and bell peppers until soft.
  5. Assemble Bowls: Layer cilantro lime rice in bowls followed by sliced steak, sautéed veggies, corn salsa, guacamole/sour cream, and garnish with cilantro.
