  • 1 cup cherry tomatoes, halved
  • 1 cup cooked quinoa or brown rice
  • 1 small red onion, diced
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Marinate the flank steak by mixing olive oil, cumin, chili powder, salt, and pepper in a bowl. Rub it onto the steak and let it sit for at least 30 minutes.
  2. Preheat your grill or skillet to medium-high heat.
  3. Cook the marinated steak for about 4-5 minutes on each side until medium-rare (130°F). Rest for 10 minutes before slicing thinly against the grain.
