  • 12 ounces evaporated milk
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp minced garlic
  • 2 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • 8 ounces shredded mozzarella cheese
  • 4 ounces shredded Monterey Jack cheese
  • 2 ounces shredded Parmesan cheese
  • 10 ounces frozen chopped spinach (thawed and drained)
  • 12 ounces marinated artichoke hearts (quartered)
  • 16 ounces Casarecce pasta (or penne/rigatoni)

Instructions

  1. In a large pan over medium heat, melt the butter. Stir in flour to create a roux until lightly golden brown.
  2. Boil water in a separate pot, add salt, then cook pasta until just under al dente.
  3. Gradually whisk evaporated milk into the roux until smooth. Add spices and let thicken slightly while stirring.
  4. Stir in most of the cheese until melted, then mix in spinach and artichokes.
  5. Combine cooked pasta with the sauce; add reserved pasta water if needed for consistency.
  6. Top with remaining cheese and broil for 4–6 minutes until golden brown.
