  • 2 cups Panko bread crumbs
  • 1/2 cup Parmesan cheese, shredded

  • 5 1/2 cups whole milk
  • 1 tablespoon Dijon mustard
  • 4 ounces cream cheese
  • 4 cups smoked Gouda cheese, shredded
  • 1 pound dried elbow pasta

Instructions

  1. Preheat your oven to 375°F and butter a 3-quart casserole dish.
  2. For the topping, mix Panko bread crumbs, melted butter, Parmesan cheese, and fresh thyme in a bowl.
  3. In a saucepan, warm milk over medium heat while melting remaining butter in a skillet. Whisk in flour to create a roux for about one minute.
  4. Gradually whisk warm milk into the roux until thickened; remove from heat.
  5. Stir in Dijon mustard, seasonings, cream cheese, and most of the smoked Gouda.
  6. Cook elbow pasta until just under al dente; drain and return to pot.
  7. Combine pasta with cheese sauce until well coated and spread into the prepared dish.
  8. Top with breadcrumb mixture and remaining Gouda; bake for about 30 minutes until golden brown.
