  • 1 cup granulated sugar (for caramel sauce)
  • 6 tablespoons unsalted butter, cubed (for caramel sauce)
  • 1/2 cup heavy cream (for caramel sauce)
  • 1 teaspoon sea salt (for salted caramel)

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press this mixture firmly into the bottom of your pan.
  2. In a large mixing bowl, beat the softened cream cheese until it's smooth and creamy. Gradually add sugar while mixing until fully incorporated. Then add eggs one at a time on low speed.
  3. Pour your creamy filling over the cooled crust and smooth out the top. Place your springform pan inside a larger roasting pan filled with hot water halfway up its sides. Bake for about 55-65 minutes until slightly jiggly in the center.
  4. After baking, turn off your oven but leave the door ajar while letting your cheesecake cool inside for about an hour. Chill it in the fridge for at least four hours—or overnight if you can wait!
