  • 1/4 cup + 1 tablespoon melted unsalted butter
  • 2 large eggs
  • 1/2 cup granulated sugar (for filling)
  • 2 teaspoons ground cinnamon
  • 1 cup fresh raspberries (finely chopped)
  • 1 cup powdered sugar (for glaze)
  • juice and zest of 1 lemon
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, mix together flour, sugar, yeast, and salt.
  2. In another bowl, whisk milk, melted butter, and eggs until smooth.
  3. Combine wet and dry ingredients to form dough.
  4. Knead on a floured surface for about 8-10 minutes until smooth.
  5. Place dough in a greased bowl and let rise for one hour until doubled.
  6. Mix sugar and cinnamon in a small bowl; toss raspberries into this mixture.
  7. Roll out dough into a rectangle; spread raspberry filling evenly.
  8. Roll tightly into a log shape and cut into twelve slices.
  9. Arrange slices in a greased baking pan; let rise again for thirty minutes.
  10. Preheat oven to 375°F (190°C).
  11. Bake rolls for about twenty-five minutes or until golden brown.
  12. Prepare glaze by whisking powdered sugar with lemon juice, zest, and vanilla extract; drizzle over warm rolls.
