  • 1 1/2 cups finely diced pineapple
  • 1 cup shredded carrot
  • 1/2 red onion (fine dice)
  • 2 jalapeños (de-seeded and finely diced)
  • 1/2 bunch cilantro (stems and leaves finely chopped)
  • 3 tablespoons white vinegar
  • Juice of 1 lime (about 2 tablespoons)
  • 3 tablespoons neutral oil
  • 1 teaspoon kosher salt
  • Black pepper (to taste)

Instructions

  1. In a jar, combine 3 tablespoons of white vinegar, the juice of 1 lime, 3 tablespoons of neutral oil, 1 teaspoon of kosher salt, and black pepper to taste. Seal and shake until mixed.
  2. In a large bowl, mix 4 cups of shredded cabbage, 1 1/2 cups of finely diced pineapple, 1 cup of shredded carrot, 1/2 diced red onion, 2 finely diced jalapeños, and chopped cilantro.
  3. Pour the dressing over the vegetables and toss gently until all are coated.
  4. Let sit for 5-10 minutes in the fridge before serving to enhance flavors.
