  • 2 tablespoons light brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. In a large bowl, cream together softened butter with granulated and brown sugars until fluffy. Beat in the egg and vanilla until well combined.
  4. Gradually add dry ingredients to wet mixture and mix gently until just combined. Fold in diced peaches.
  5. For the streusel topping: Mix oats, melted butter, flour, brown sugar, and cinnamon in a small bowl until crumbly.
