  • 1 medium onion (chopped)

  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon smoked paprika
  • 4 medium carrots (peeled and diced)
  • 1 cup red lentils (rinsed)
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic; sauté until fragrant and translucent.
  2. Stir in diced carrots, rinsed lentils, cumin, coriander, and smoked paprika. Cook for about 2–3 minutes to toast the spices.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20–25 minutes until carrots and lentils are tender.
  4. Use an immersion blender to blend part of the soup until creamy. Adjust consistency by blending more or less as desired.
  5. Stir in coconut milk, season with salt, pepper, and lemon juice before serving.
