  • 1/2 cup Granulated Sugar
  • 1/4 cup Light Brown Sugar, lightly packed
  • 1/4 cup Unsweetened Cocoa Powder
  • 1/4 cup Dutch Process Cocoa Powder
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 2 Large Eggs
  • 1/2 cup Buttermilk
  • 1/4 cup Vegetable Oil
  • 1 tsp Vanilla Extract
  • 1/2 tsp Espresso Powder (optional)
  • 1/4 cup Hot Water
  • 4 oz Andes Mints (for ganache)
  • 1/4 cup Heavy Whipping Cream (for ganache and frosting)
  • 1 cup Unsalted Butter (room temperature)
  • 3 cups Sifted Powdered Sugar
  • 56 tbsp Heavy Whipping Cream (for frosting)
  • 34 drops Green Food Coloring
  • 2 tsp Peppermint Extract
  • 1/4 cup Crushed Chocolate Wafers (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, whisk together all-purpose flour, sugars, cocoa powders, baking powder, baking soda, and salt.
  2. In another bowl, mix eggs, buttermilk, vegetable oil, vanilla extract, and optional espresso powder. Gradually combine wet ingredients into dry ingredients until just mixed. Gently stir in hot water.
  3. For the ganache filling, melt Andes mints with heavy cream over low heat; let cool slightly. Fill cupcake liners halfway with batter, add a teaspoon of ganache in the center, then top off with more batter.
  4. Bake for about 20 minutes or until a toothpick comes out clean. Allow cooling completely on wire racks.
  5. For frosting: beat room temperature butter until creamy; gradually add powdered sugar and whipping cream until fluffy. Mix in green food coloring and peppermint extract.
