  • 1 jalapeño (diced)
  • 1/2 large red onion (diced)
  • 2/3 cup cotija cheese (or nutritional yeast for vegan option)
  • 3 tablespoons sour cream (or vegan yogurt)
  • 4 tablespoons fresh lime juice
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon chili powder

Instructions

  1. Sauté the corn in olive oil over medium-high heat for about 7-10 minutes until slightly charred.
  2. In a large bowl, mix the sautéed corn with diced bell pepper, jalapeño, cilantro, and red onion.
  3. In a separate bowl, whisk together the dressing ingredients until smooth.
  4. Pour the dressing over the corn mixture and stir well to combine. Fold in half of the cotija cheese.
  5. Garnish with remaining cotija cheese and cilantro leaves before serving.
