  • 1/4 cup sun dried tomatoes
  • 2 oz. frozen spinach
  • 1/4 cup crumbled feta cheese
  • 1/4 cup minced red onion
  • 1 tsp dried oregano
  • 1/2 cup plain Greek yogurt
  • 1/2 Tbsp lemon juice
  • 1/8 tsp garlic powder
  • 1/8 tsp dried dill
  • 1/8 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1 Tbsp cooking oil
  • 5 hamburger buns
  • 1/2 cucumber (sliced)

Instructions

  1. Prepare the lemon dill yogurt sauce by mixing Greek yogurt, lemon juice, garlic powder, dried dill, and salt in a bowl. Refrigerate until ready to use.
  2. Thaw the frozen spinach and squeeze out excess moisture. Finely chop the sun-dried tomatoes and mince the red onion.
  3. In a large bowl, combine ground turkey, spinach, sun-dried tomatoes, red onion, feta cheese, oregano, garlic powder, and salt. Mix until well combined.
  4. Divide the mixture into five equal portions and shape into patties.
  5. Heat oil in a skillet over medium heat. Cook patties for 5-7 minutes on each side until cooked through.
  6. Assemble burgers by spreading the yogurt sauce on buns and adding cucumber slices if desired.
