  • 1 lb flank steak (or NY strip/sirloin)
  • 10 oz grape or cherry tomatoes
  • ½ medium red onion
  • 1 head romaine lettuce
  • 1 large cucumber
  • ⅓ cup pitted kalamata olives
  • 1 cup garlic hummus
  • ½ cup crumbled feta cheese (optional)
  • 1 cup plain yogurt
  • 1 Tbsp olive oil or avocado oil
  • Juice of ½ lemon
  • 1 large clove garlic, finely minced
  • ½ tsp dried oregano
  • ½ tsp dried dill
  • ½ tsp salt
  • 2 tsp chopped fresh mint or ½ tsp dried mint

Instructions

  1. Prepare the herbed-yogurt dressing by whisking together yogurt, olive oil, lemon juice, minced garlic, oregano, dill, salt, and mint in a small bowl. Set aside.
  2. Preheat the grill to high heat (about 450°F).
  3. Season flank steak with salt and pepper. Skewer cherry tomatoes and red onion pieces; brush with oil and season.
  4. Grill the steak for about 4-5 minutes per side for medium-rare. Grill veggie skewers for 5-8 minutes until tender.
  5. Let the steak rest for approximately 10 minutes before slicing thinly against the grain.
  6. Assemble each bowl by layering chopped romaine lettuce, sliced steak, grilled veggies, hummus dollops, cucumbers, olives, and feta cheese.
  7. Drizzle with herbed-yogurt dressing before serving.
