  • 2 cups cooked quinoa or couscous

  • 1 bell pepper, diced
  • 1 cup red onion, thinly sliced
  • 1 cup chickpeas, drained and rinsed
  • ½ cup feta cheese, crumbled (optional)
  • ¼ cup Kalamata olives, pitted and sliced (optional)
  • Fresh parsley for garnish

Instructions

  1. In a bowl, mix olive oil, lemon juice, paprika, salt, and pepper. Marinate flank steak for 15-30 minutes.
  2. Cook quinoa or couscous following package instructions.
  3. Preheat grill or grill pan over medium-high heat and grill the marinated flank steak for about 6-8 minutes per side for medium-rare.
  4. Allow the steak to rest for about 5 minutes before slicing against the grain.
  5. Combine cherry tomatoes, cucumber, bell pepper, red onion, and chickpeas in a bowl; season with olive oil, salt, and pepper.
  6. Assemble bowls by layering quinoa or couscous followed by grilled steak slices and vegetable mixture. Top with feta cheese and olives if desired.
