  • 6 skinless boneless chicken thighs
  • 1 tablespoon garlic paste (or minced garlic)
  • ½ teaspoon dried oregano
  • ½ teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 small yellow onion (finely diced)
  • 2 cloves garlic (minced)
  • 1 small lemon (thinly sliced)
  • ¼ cup white grape juice
  • 1 cup chicken broth
  • 1 cup marinated olives

Instructions

  1. In a large bowl, combine garlic paste, oregano, Italian seasoning, salt, and pepper. Add chicken thighs and coat thoroughly with the marinade.
  2. Heat olive oil in a large nonstick skillet over medium heat. Sear the chicken thighs for about 5-6 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, sauté diced onions and minced garlic in the remaining oil until soft (about 3 minutes).
  4. Add thinly sliced lemon and white grape juice; cook for another 3 minutes.
  5. Pour in chicken broth and bring to a boil. Return chicken to the skillet, reduce heat, and simmer for about 5 minutes.
  6. Stir in marinated olives and simmer for an additional 10 minutes.
  7. Let stand for a few minutes before serving.
