  • ¼ cup strawberry jam (for filling)
  • 1 cup unsalted butter (for frosting, softened)
  • 3 cups powdered sugar
  • 2 tbsp heavy cream (or milk)
  • 2 tbsp mango purée (for frosting)
  • 2 tbsp strawberry purée (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream softened butter and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time along with vanilla extract. Then add milk and mango purée.
  5. Slowly mix dry ingredients into the wet mixture until just combined.
  6. Fill cupcake liners about three-quarters full and bake for 18-20 minutes until golden brown. Cool completely on a wire rack.
  7. Once cooled, create an opening in each cupcake's center and fill with strawberry jam.
  8. For frosting, beat softened butter until creamy; gradually add powdered sugar until smooth.
  9. Divide frosting into three bowls—keep one plain, add mango purée to another for orange color, and mix strawberry purée into the last bowl for pink color.
  10. Layer the colored frostings side-by-side in a piping bag and swirl onto each cupcake.
  11. Garnish with fresh fruit slices before serving.
