  • 300 g small pasta (ditalini or macaroni)
  • 1 cup shredded purple cabbage
  • 1 cup shredded green cabbage
  • 1 cup shredded carrot
  • 1 cup diced bell peppers
  • 1 cup diced celery
  • 1/2 cup diced red onion
  • 1/2 cup chopped scallions
  • 1/2 cup chopped parsley
  • 1 cup mayonnaise (vegan optional)
  • 1/4 cup apple cider vinegar
  • 2 teaspoons dijon mustard
  • 2 teaspoons pure maple syrup
  • 1/2 teaspoon granulated garlic
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package directions in boiling water until al dente. Drain and rinse under cold water.
  2. In a small bowl, whisk together mayonnaise, apple cider vinegar, dijon mustard, maple syrup, granulated garlic, salt, and pepper until smooth.
  3. In a large bowl, combine all vegetables with cooled pasta. Pour dressing over and toss gently until well-coated.
