  • 8 tbsp unsalted butter
  • 1 3/4 cups sugar
  • 2 large eggs
  • 2 1/4 tsp pure vanilla extract
  • 1 1/4 cups whole milk
  • 1/2 cup extra-strong lavender Earl Grey tea (cooled)
  • For Frosting: 16 tbsp unsalted butter
  • 4 cups confectioner's sugar
  • 1 tsp whole milk
  • 1/4 cup extra-strong lavender Earl Grey tea (cooled)
  • 1 tsp pure vanilla extract
  • 1/8 tsp salt
  • 1/4 tsp purple food color (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two cupcake pans with liners.
  2. In a bowl, sift together flour, baking powder, and salt.
  3. In a stand mixer, cream unsalted butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Combine milk and vanilla extract; gradually add to the butter mixture along with dry ingredients.
  6. Slowly stir in cooled tea until fully incorporated.
  7. Fill cupcake liners two-thirds full and bake for about 18 minutes or until a toothpick comes out clean.
  8. While cooling, prepare frosting by beating butter and confectioner's sugar until smooth; mix in tea and vanilla.
  9. Frost cooled cupcakes as desired.
