  • 2 tablespoons gochujang (Korean chili paste)
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon black pepper
  • 1 English cucumber, thinly sliced
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 cup mayonnaise
  • 12 tablespoons gochujang (adjust to spice preference)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon rice vinegar
  • 2 cups cooked rice (Jasmine or short-grain preferred)
  • 2 cups baby spinach or mixed greens
  • 1 cup shredded carrots
  • 1 cup bean sprouts
  • 1/2 cup kimchi (optional)
  • 2 green onions, thinly sliced
  • sesame seeds, for garnish
  • sriracha (optional), for extra heat

Instructions

  1. In a bowl, combine soy sauce, brown sugar, sesame oil, gochujang, rice vinegar, minced garlic, grated ginger, and black pepper.
  2. Marinate thinly sliced flank steak in the mixture for at least 30 minutes.
  3. Heat oil in a skillet over medium-high heat and cook marinated steak for 2-3 minutes on each side.
  4. Slice steak against the grain after resting for 5 minutes.
  5. For pickled cucumbers, mix slices with rice vinegar, sugar, and salt; let sit for at least 15 minutes.
  6. Prepare spicy mayo by mixing mayonnaise with gochujang and rice vinegar.
  7. Assemble bowls with cooked rice, greens, sliced steak, shredded carrots, bean sprouts, pickles, and drizzle with spicy mayo.
