  • 1/3 cup all-purpose flour (for crumb topping)
  • 1/2 cup chilled unsalted butter (for crumb topping)
  • 6 to 8 large apples (like Granny Smith and Honeycrisp)
  • 1/3 cup granulated sugar (for filling)
  • 1/4 cup packed brown sugar
  • 4 tablespoons cold, unsalted butter, cut into 1/4-inch dice
  • 1 TBSP plus 1 tsp cornstarch
  • 2 tsp vanilla extract (alcohol-free)
  • 1 tsp dry pectin or an extra 1/2 tsp cornstarch
  • 1/2 tsp ground cinnamon
  • 1/4 tsp freshly grated nutmeg
  • 1/4 tsp kosher salt
  • 1 cup brown sugar (for sauce)
  • 1/2 cup light corn syrup
  • 3 tbsp unsalted butter (for sauce)
  • 1 1/2 tsp kosher salt (for sauce)
  • 1/2 cup heavy cream
  • 1 TBSP spiced vanilla extract (alcohol-free)

Instructions

  1. Prepare the crust: Combine flour, salt, and sugar in a food processor. Add chilled butter and pulse until crumbly. Gradually add ice water until dough forms. Chill for at least one hour.
  2. Roll out the dough into a circle for your pie pan and crimp edges.
  3. Make the filling: Sauté sliced apples with sugars until caramelized but not mushy.
