  • 1 pound chicken fillet (breast or skinless boneless thighs)
  • 1 head romaine lettuce
  • 1 avocado
  • 1/2 cup tomatoes (grape or cherry)
  • 1/4 cup corn kernels
  • 1/4 red onion
  • 1/3 cup honey
  • 2 tablespoons dijon mustard
  • 1/2 teaspoon ground mustard
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic, minced
  • Salt to taste
  • Turkey bacon for a crispy texture (instead of pork bacon)
  • Goat cheese to garnish (optional)
  • 1/4 cup croutons (optional)

Instructions

  1. In a small bowl, whisk together honey, Dijon mustard, ground mustard, olive oil, apple cider vinegar, minced garlic, and salt to create the dressing.
  2. Marinate the chicken in a third of the dressing for at least 30 minutes.
  3. Cook turkey bacon until crispy; set aside. In the same pan, cook the marinated chicken until golden brown and cooked through. Slice it afterward.
  4. In a large salad bowl, layer romaine lettuce as the base followed by turkey bacon bits, tomatoes, avocado slices, corn kernels, red onion, and sliced chicken. Drizzle with remaining dressing and top with crumbled goat cheese if desired.
