  • ⅔ cup peeled and diced red apple (about 1 apple)
  • ⅓ cup melted coconut oil
  • ¼ cup real maple syrup
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a large mixing bowl, combine rolled oats, chopped walnuts, cinnamon, nutmeg, and salt.
  3. Gently fold in the diced apples. Add melted coconut oil, maple syrup, and vanilla extract; mix until well combined.
  4. Spread the mixture evenly on a lined baking sheet and press down lightly for clusters. Bake for 22 to 28 minutes, stirring halfway through until golden brown.
  5. Allow the granola to cool for at least 20 minutes before breaking it into clusters. Store in an airtight container at room temperature for up to one week.
