  • 1/3 cup melted butterscotch chips
  • 1/2 cup buttermilk
  • 1 3/4 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups unsalted butter (for frosting)
  • 1 cup melted butterscotch chips (for frosting)
  • 2 1/4 cups powdered sugar (for frosting)
  • 3/4 tsp butter extract (for frosting)
  • 1/2 tsp vanilla (for frosting)
  • 1/4 cup butterscotch chips (for topping)
  • 1 tbsp heavy cream (for frosting)
  • 1/2 tbsp honey (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy.
  3. Add eggs one at a time, mixing well; then stir in vanilla extracts.
  4. In another bowl, whisk flour, baking powder, baking soda, and salt; gradually add to wet mixture alternately with buttermilk.
  5. Fold in melted butterscotch chips gently until combined.
  6. Fill cupcake liners two-thirds full with batter and bake for about 15 minutes or until a toothpick comes out clean.
  7. Cool completely on a wire rack before frosting.
