  • 1 cup orzo
  • 3 ears of corn
  • 1 bunch green scallions
  • 2 tsp avocado oil
  • 5 garlic cloves
  • Zest and juice of 1 lemon
  • 1 tbsp white grape juice vinegar
  • 1/4 cup extra virgin olive oil
  • 1 tsp miso paste
  • 1/4 cup fresh dill
  • 12 oz frozen edamame (thawed)
  • 1/3 cup marinated artichoke hearts
  • 3 cups baby arugula

Instructions

  1. Cook the orzo according to package instructions in salted boiling water until al dente; drain and set aside.
  2. Grill the corn on medium heat for about 10-12 minutes until charred; allow to cool before cutting off kernels.
  3. Sear white parts of scallions with garlic in avocado oil on the grill until fragrant.
  4. Blend together seared scallions, garlic, lemon zest and juice, vinegar, olive oil, miso paste, and salt for the dressing.
  5. In a large bowl, combine cooked orzo, corn kernels, artichokes, edamame, oregano, red pepper flakes (if using), and arugula; drizzle with dressing and mix well.
  6. Serve immediately or chill before serving.
