  • 2 Boneless, Skinless Chicken Breasts
  • 1 Cup Cooked Brown Rice
  • 2 Cups Mixed Greens
  • ½ Cup Black Beans
  • ½ Cup Canned Corn (drained)
  • ⅓ Cup Cherry Tomatoes (cut into quarters)
  • 2 tablespoons Greek Yogurt
  • Fresh Lime Juice
  • 2 tablespoons Olive oil
  • 1 tablespoon Fresh lime juice
  • ½ teaspoon Paprika
  • ½ teaspoon Ground Cumin
  • ¼ teaspoon Chili Powder
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Onion Powder
  • ¼ teaspoon Dried Oregano
  • A pinch of sea salt and freshly ground black pepper (to taste)

Instructions

  1. Marinate the chicken by mixing olive oil, lime juice, and spices in a ziploc bag. Add chicken breasts, seal the bag, and shake to coat.
  2. Preheat your grill pan or outdoor grill over medium-high heat; cook chicken for 5-7 minutes on each side until fully cooked. Let rest for 5 minutes before slicing.
  3. Mix cooked brown rice with lime juice and chopped cilantro in a bowl.
  4. Assemble bowls starting with mixed greens at the bottom; layer with sliced chicken and rice. Top with black beans, corn, cherry tomatoes, Greek yogurt, diced onion, and jalapeño. Garnish with cilantro.
