  • 2 tablespoons apple juice
  • 0.5 cup heavy cream
  • 1 tablespoon Dijon mustard

Instructions

  1. Pat steaks dry and season generously with salt and pepper. Let rest at room temperature for 30–45 minutes.
  2. Heat a cast iron skillet over high heat; add oil to coat.
  3. Sear steaks for 2–3 minutes on each side until golden brown.
  4. Add butter, garlic, and thyme; baste continuously for added flavor.
  5. Check internal temperature (remove at 130°F for medium-rare) and let rest for 5–10 minutes.
  6. Deglaze the skillet with apple juice, then stir in mustard, crushed peppercorns, and heavy cream. Simmer until thickened.
