  • 4 large sweet onions, thinly sliced
  • 1 pound short cut pasta, cooked
  • 3 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 2 ½ cups milk
  • 12 ounces gruyere cheese, freshly grated
  • 4 ounces parmesan cheese, freshly grated
  • ⅓ cup seasoned bread crumbs
  • Fresh thyme for garnish

Instructions

  1. Caramelize the onions by heating olive oil in a skillet over medium heat. Add sliced onions and salt, cooking for about 10-15 minutes until softened. Lower heat to medium-low and stir frequently for 60 to 90 minutes until golden brown.
  2. In the same skillet, melt butter over medium heat, add flour to create a roux. Gradually whisk in milk and stir until thickened. Add nutmeg and most of the grated cheeses until melted.
  3. Combine three-quarters of caramelized onions with the cheese sauce and cooked pasta.
  4. Preheat oven to 375°F (190°C). Transfer pasta mixture to a baking dish, top with remaining onions, reserved cheese, and bread crumbs. Bake for 25–30 minutes until bubbly and golden.
  5. Let cool slightly before garnishing with fresh thyme.
