  • 8 oz dry pasta
  • 4 cups whole corn kernels (or 16 oz frozen corn)
  • ½ cup crumbled cotija cheese (or alternatives)
  • ½ red onion, diced
  • ½ cup fresh cilantro or parsley, chopped
  • 1 jalapeno pepper, chopped
  • olive oil mayonnaise
  • 1 cup plain Greek yogurt
  • lime zest and juice
  • chili powder
  • smoked paprika
  • garlic powder
  • kosher salt
  • black pepper

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and toss with olive oil to prevent sticking.
  2. If using fresh corn, roast it at 425°F for about 25-30 minutes after seasoning with olive oil, salt, and pepper. Alternatively, heat frozen corn in a skillet over medium-high heat for about 4-5 minutes.
  3. In a small bowl, whisk together Greek yogurt, olive oil mayonnaise, lime zest and juice, chili powder, smoked paprika, garlic powder, salt, and pepper to create the dressing.
  4. In a large bowl, combine cooled pasta with roasted corn, cilantro (or parsley), diced onion, cotija cheese (or alternative), and jalapeno. Pour dressing over the top and mix gently until well combined.
  5. For freshness when preparing ahead of time, wait to add cheese and cilantro until just before serving.
