  • 12 large eggs
  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons finely diced red onion
  • 1 tablespoon finely diced jalapeño (optional)
  • 2 tablespoons chipotle mayo
  • Paprika for garnish

Instructions

  1. Boil the eggs in cold water until hard-boiled (10-12 minutes). Cool under cold water and peel.
  2. Slice each egg in half lengthwise and scoop out the yolks into a mixing bowl.
  3. Mash yolks with mayonnaise, sour cream, cilantro, lime juice, chili powder, garlic powder, salt, and pepper until smooth.
  4. Spoon or pipe the filling into egg whites.
  5. Top with a mixture of cotija cheese, red onion, jalapeño (if using), and drizzle chipotle mayo over each egg.
  6. Garnish with paprika before serving.
