  • 1/4 tsp Salt
  • 1/2 cup Unsalted butter (or non-dairy butter)

  • 2 large Eggs (or flax eggs for vegan)
  • 1 tsp Vanilla extract
  • 1/2 cup Buttermilk (or non-dairy milk mixed with lemon juice)
  • 1 cup Boiling water
  • 1 tbsp Raspberry preserves
  • 1/2 cup Unsalted butter (for frosting or non-dairy butter)
  • 2 cups Powdered sugar
  • 1/3 cup Raspberry puree (fresh or frozen)
  • 1 tsp Vanilla extract (for frosting)
  • 1 pinch Salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease your muffin tin or line it with cupcake liners.
  3. In a large bowl, whisk together the flour, cocoa powder, baking soda, and salt until well combined.
  4. In another bowl, cream together the unsalted butter and sugar until light and fluffy.
  5. Beat in the eggs one at a time along with the vanilla extract.
  6. Stir in buttermilk followed by boiling water until everything is well incorporated.
  7. Spoon about half of the batter into each muffin cup. Then add about a teaspoon of raspberry preserves in the center before topping off with more batter until each cup is three-quarters full.
  8. Place your filled muffin tin into the preheated oven and bake for about 22 minutes.
  9. Let them cool in the tin for about five minutes before transferring them to wire racks.
