  • 3 lbs Bone-In Beef Short Ribs
  • 3 Cups Baby Carrots
  • 2 Cups Sliced Mushrooms
  • 2 Cups Beef Broth
  • 1 Cup Apple Vinegar (optional)
  • 2 Tbsp Tomato Paste
  • 3 Tbsp Unsalted Butter
  • 1 Bay Leaf
  • 8 Sprigs Fresh Thyme
  • 1 Tbsp Minced Garlic
  • Salt and Pepper to taste

Instructions

  1. Season the short ribs generously with salt and pepper, then brown them in a skillet over medium heat for about 20 seconds on each side to enhance flavor.
  2. Transfer the browned ribs to the crockpot, adding baby carrots, sliced mushrooms, beef broth, apple vinegar (if using), tomato paste, butter, bay leaf, thyme sprigs, minced garlic, and additional salt and pepper.
  3. Cover and cook on low for about 8 hours until the meat is tender.
  4. Remove the short ribs and vegetables from the crockpot while reserving the cooking liquid to serve alongside.
