  • 2 pounds baby potatoes
  • 3 tablespoons olive oil
  • 3/4 cup Greek yogurt
  • 1/2 cup kewpie mayonnaise
  • 2 teaspoons Dijon mustard
  • 1/2 lemon (juiced)
  • 1 garlic clove (minced)
  • Fresh parsley (chopped)
  • 1 dill pickle (finely chopped)
  • 1 shallot (finely chopped)
  • Salt and pepper to taste
  • 12 scallions for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil baby potatoes in salted water for 7-8 minutes until fork-tender.
  3. Drain and dry potatoes, then smash each to about 1/4 inch thick.
  4. Place smashed potatoes on the baking sheet, brush with olive oil, and season with salt and pepper.
  5. Roast for 45-60 minutes until golden brown and crispy, flipping halfway through.
  6. Meanwhile, whisk together Greek yogurt, mayonnaise, mustard, lemon juice, garlic, parsley, dill pickle, and shallot in a bowl.
  7. Once roasted potatoes cool slightly, toss them in the dressing until evenly coated.
  8. Garnish with extra scallions and crispy bits before serving.
