  • 1 medium head cauliflower (or 4 cups riced cauliflower)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). If using a whole cauliflower, chop it into florets and pulse in a food processor until it resembles rice.
  2. Microwave the riced cauliflower in a covered bowl for about 5-6 minutes until tender. Allow to cool slightly.
  3. In a large bowl, mix the cooked cauliflower with mozzarella, Parmesan, egg, garlic powder, oregano, salt, black pepper, and optional herbs.
  4. Line a baking sheet with parchment paper and spread the mixture into a circular shape about half an inch thick.
  5. Bake for 25-30 minutes until golden brown and crispy on the edges.
  6. Let cool slightly before adding your favorite toppings; then return to the oven for another 10-15 minutes until heated through.
