  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/2 cup brewed coffee, cooled
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream for filling
  • 2 tbsp powdered sugar for filling
  • 1 tsp instant coffee granules for filling
  • 1/2 cup heavy cream for ganache
  • 4 oz dark chocolate, chopped for ganache

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix together sugars and vegetable oil until smooth. Add eggs, brewed coffee, milk, and vanilla; mix well.
  4. Gradually incorporate dry ingredients into wet mixture until just combined.
  5. Fill cupcake liners about two-thirds full with batter and bake for 18–20 minutes until a toothpick comes out clean.
  6. Cool completely on a wire rack before filling.
  7. Whip heavy cream with powdered sugar and instant coffee until stiff peaks form.
  8. Core cooled cupcakes and fill with coffee cream.
  9. Make ganache by heating heavy cream until simmering; pour over chopped chocolate and stir until smooth.
  10. Top each filled cupcake with ganache and let set before serving.
