  • 1 whole skirt steak (1.52 pounds)
  • ½ teaspoon kosher salt
  • ⅓ cup olive oil or avocado oil
  • ¼ cup apple vinegar or apple juice vinegar
  • 3 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary
  • 1 teaspoon ground pepper

Instructions

  1. Trim the skirt steak of excess fat and pat it dry.
  2. Season generously with kosher salt.
  3. In a bowl, whisk together olive oil, apple vinegar, soy sauce, Dijon mustard, garlic, thyme, rosemary, and ground pepper.
  4. Place the steak in a resealable bag with the marinade; seal and massage to coat evenly. Refrigerate for at least 2 hours (preferably overnight).
  5. Preheat your grill or skillet over high heat.
  6. Remove steak from marinade, pat dry again, and sprinkle with more ground pepper.
  7. Grill on high heat for about 3-4 minutes per side until charred but juicy.
  8. Let it rest for 10 minutes before slicing against the grain.
