  • 1/2 cup vegetable oil

  • 1 1/2 cups finely shredded carrots
  • 1/2 cup chopped walnuts or pecans (optional)
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In one bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In another bowl, beat eggs with sugars, vegetable oil, and vanilla until well combined.
  3. Gradually stir in the dry ingredients before folding in the finely shredded carrots and nuts if using. Pour this mixture into your prepared pan and smooth out the top.
  4. In a clean bowl, beat the softened cream cheese until smooth. Mix in sugar and flour before adding vanilla and eggs one at a time. Stir in sour cream until fully incorporated.
  5. Carefully pour the cheesecake mixture over the carrot cake layer.
  6. Bake for 50–60 minutes until just set. Once baked, turn off the oven but leave the door cracked open while letting it cool inside for about 30 minutes.
  7. Cool completely at room temperature. Then refrigerate for at least 4 hours or preferably overnight.
