  • 16 oz cream cheese (softened)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 medium Granny Smith apples (peeled and diced)
  • 2 tbsp lemon juice
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter (cold and cubed)
  • 1/4 cup chopped pecans (optional)
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Press this mixture firmly into the bottom of your lined baking pan.
  3. In another bowl, beat together softened cream cheese and granulated sugar until smooth. Add in eggs one at a time along with vanilla extract—mixing until well combined.
  4. In a separate bowl, toss diced Granny Smith apples with lemon juice, brown sugar, cinnamon, and nutmeg.
  5. Pour half of the cheesecake filling over your crust, layer on your prepared apple mixture, then spread the remaining cheesecake filling on top.
  6. In another bowl, mix flour, brown sugar, cold cubed butter (and chopped pecans if using) until crumbly. Sprinkle this topping generously over your assembled bars before placing them in the oven.
  7. Bake in your preheated oven for about 45 minutes or until set. Let them cool completely before drizzling with homemade caramel sauce.
