  • 1/2 pound mezzi rigatoni (or small pasta)
  • 1 1/4 cup cheddar cheese, shredded
  • 3/4 cup smoked gouda cheese, shredded
  • 1/2 cup parmesan cheese, shredded
  • 1/4 cup unsalted butter
  • 1/4 cup flour
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon nutmeg, ground
  • 1/8 teaspoon ground pepper
  • 1/4 teaspoon Tabasco sauce

Instructions

  1. Cook the pasta according to package instructions until al dente; drain.
  2. Melt butter in a pot over medium heat; whisk in flour to create a roux until lightly golden.
  3. Gradually add milk while whisking to avoid lumps; stir in salt, nutmeg, pepper, and Tabasco until thickened.
  4. Lower heat and mix in cheeses until melted; fold in mashed butternut squash.
  5. Combine pasta with the cheese sauce; transfer to a baking dish. Top with extra cheese if desired and bake at 350°F (175°C) for about 20 minutes.
