Ingredients

Scale
  • 2 packages (6 ounces each) Driscolls raspberries
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup orange juice
  • 2 slices sourdough or French bread
  • 2 tablespoons mayonnaise
  • 2 ounces brie cheese (about 4 tablespoons), at room temperature
  • 4 slices manchego, white cheddar, or provolone cheese
  • 8 Driscolls raspberries

Instructions

  1. Make the raspberry compote: In a small saucepan, combine raspberries, sugar, vanilla extract, and orange juice. Cook over medium heat until boiling, then reduce heat and simmer for about 15-20 minutes until thickened.
  2. Cool the compote: Allow the mixture to cool at room temperature.
  3. Assemble the sandwich: Spread mayonnaise on one side of each slice of bread. On the unbuttered side of one slice, layer brie cheese followed by raspberry compote and additional cheese before topping with the second slice of bread.
  4. Grill the sandwich: Heat a skillet over medium-low heat. Grill the sandwich for about 3-4 minutes on each side until golden brown and the cheese is melted.
  5. Serve warm: Slice in half and enjoy with garnishes like fresh mint or honey if desired.
