  • 2 pounds baby potatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Cook the halved baby potatoes in salted boiling water until fork-tender (about 15-20 minutes). Drain and let cool.
  2. In a small bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper.
  3. In a large bowl, combine cooled potatoes with red onion and cherry tomatoes. Pour dressing over and toss gently until well coated.
  4. Fold in fresh parsley and basil. Adjust seasoning if needed.
  5. Serve warm or chill for about 30 minutes before serving to allow flavors to meld.
