  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 6 tablespoons unsalted butter, melted and cooled
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 containers (5.3 ounces each) blueberry Greek yogurt
  • 1 cup fresh or frozen blueberries
  • 2 cups powdered sugar
  • 1/3 cup milk
  • 2 teaspoons blueberry jam or mashed blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a mini muffin pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix melted butter, egg, vanilla extract, and blueberry Greek yogurt until smooth.
  4. Combine wet ingredients with dry ingredients and gently fold in blueberries.
  5. Fill muffin cups with batter almost to the top and bake for about 15 minutes until lightly browned.
  6. Prepare the glaze by mixing powdered sugar, milk, and blueberry jam until smooth.
  7. After baking, dip fritters in the glaze and broil for an additional 3-4 minutes for crispiness.
  8. Allow to cool slightly before serving.
