Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup packed brown sugar
  • 3/4 cup cold butter (cut into cubes)
  • 2 (8 oz) packages cream cheese (softened)
  • 1/2 cup plus 2 tablespoons sugar (divided)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 3 medium apples (peeled and chopped)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup quick-cook oats

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, pulse the flour, brown sugar, and cold butter until crumbly. Press into a lined 13×9 inch pan and bake for about 15 minutes until lightly golden.
  3. Beat the softened cream cheese with an electric mixer until fluffy. Add half a cup of sugar and vanilla extract, mixing until smooth. Incorporate eggs one at a time, then spread over the crust.
  4. Mix chopped apples with cinnamon, nutmeg, and remaining sugar; spread over the cheesecake layer.
  5. In the food processor, combine flour, brown sugar, oats, and cold butter until crumbly; sprinkle over the apple layer.
  6. Bake for 25-30 minutes until set but slightly jiggly in the center. Cool before slicing.
